Paring Knives
Paring knives are designed for paring or peeling fruits and vegetables. They work best in your hands above the cutting board and therefore are designed with narrower blades. Knives in the 2½-4" range are generally preferred for working in your hands but 4-5" versions are more practical for use on the cutting board as small utility knives for slicing small fruits and vegetables.DA PK-135 Paring Knife 5"

This 5½” utility knife is almost small enough to be considered an over-size paring knife. It can be used for peeling and paring or slicing small fruits and vegetables on the cutting board. Features a pointed tip for fine work.
PK-25 Bird's Beak Parer 2½"
The bird’s beak or French tourne knife was initially designed for creating a specific garnish called a Tourne. However, this knife can be used for peeling, garnishing, and for intricate melon carving. The pointed tip is useful for removing strawberry stems and tomato stems.
PK-40 Paring Knife 4"
This 4″ paring knife is small enough for peeling and paring but the elevated handle allows you to use it effectively on the cutting board as well.
PKF-30 Pro Paring 3¼"
This small paring knife is the most common size for peeling and paring. Great for precision or intricate work off of the cutting board. The pointed tip can be used for intricate melon carving or simply for removing the stems from strawberries and tomatoes.
PKF-50 Pro Paring 5"
This medium paring knife is small enough to be used for peeling and paring but large enough to slice small fruits and vegetables. Because of the narrow blade, it can also be used as a small boning or utility knife.
PKF-60 Pro Utility 6"
This small utility knife can be used for a variety of tasks. It can be used for peeling and slicing small fruits and vegetables, filleting a small fish or deboning a chicken. The narrow blade has a nicely pointed tip for getting into small places.
SK-40 Santoku Paring Knife 4"
This 4″ paring knife was designed as a miniature version of the Santoku to function both as a paring knife and as a small utility knife. The up-swept handle and taller blade profile allows greater knuckle clearance so that it can be used on the cutting board to chop and slice small items. The 4″ length is still short enough to comfortably peel/pare.
SP-50 Paring Knife 5"
This 5″ paring knife was designed to function both as a paring knife and as a small utility knife. The up-swept handle and longer blade allows greater knuckle clearance so that it can be used on the cutting board to chop and slice small items. The narrow blade profile is still small enough to comfortably peel/pare.
